Escarole with Beans

This is a nutritious and delicious dish. AND it is incredibly easy to make. 2 heads of Escarole 3 Cloves of Minced Garlic 1 Tablespoon Olive Oil 1 Can of Red or White Kidney Beans Salt and Pepper to taste Clean Escarole and roughly chop. Put aside. Mince Garlic and place in large pot with the 1 Tablespoon Olive Oil. Simmer the garlic and oil over a medium heat until the garlic is golden brown. Be careful not to scorch the garlic as this will produce a bitter result to the dish. Once the garlic is golden, place all the Escarole into the pot. Salt the Escarole and cover tightly. After about 5 minutes place the rinsed canned Kidney Beans in the pot and stir the whole mixture. Cover again and simmer for 12-15 minutes, stirring every 5 minutes. Remove from the heat and serve over stale crusty bread. This can also be made as an appetizer or side dish by removing most of the water from the Escarole and then not covering the pot, thereby allowing the steam to escape; add a touch more Olive and serve.
